About Us
Freshly Milled was started by Kinjal Bhatt who spent years trying to find a solution for her chronic condition. She realized gluten wasn’t the problem; it was the grains that are used to make flour. She switched to ancient grains used all over the world that can easily be digested even by those with celiac disease.
Her mission now is to provide everyone with the same rich, natural, wholesome, nutritious, gut-friendly ancient grain flours that improved her health and life.

At Freshly Milled, we believe your daily bread should fuel your body, not burden it. That’s why every flour we offer is freshly stone-milled from certified organic, non-GMO ancient grains that have stood the test of time. They are never hybridized or stripped of their nutrients. Each batch is milled to order as per Ayurveda tradition of food being the most nourishing when eaten fresh. Hence, the lack of preservatives does reduce its shelf-life but enhances taste, health, and nutrients.

We chose to stone-mill our grains since it gently grinds the grains to release its natural oils and flavor. The rich nutty taste is like no other as electric-milled flour often loses its true essence in the large-scale mills with high temperatures.

Our grains, like USDA-certified Emmer, Spelt, Einkorn, and Kamut, are rich in vitamins, minerals, antioxidants, and fiber. They are known to be gentler on the gut, even for those with gluten sensitivities. Milled the traditional way and never stored on a shelf, our flours are as close to nature’s intention as you can get.

Our Whole-Grain Kamut Flour is rich in protein, magnesium, zinc, and healthy fats, all retained through our traditional stone grinding process. Organic Emmer / Khapli flour
